Instructions

  • Preheat the smoker to 225°F.
  • Clean the brisket with cold water and pat dry with paper towels.
  • In a small bowl, combine the salt, black pepper, paprika, garlic powder, and onion powder and generously rub it all over the brisket.
  • Place the brisket on the smoker and cook for approximately 1 1/2 hours per pound, or until the internal temperature reaches 195°F.
  • For the first four hours of smoking, add wood chips to the smoker every hour.
  • Remove the brisket from the smoker and wrap in aluminum foil tightly.
  • Allow the brisket to rest for at least 30 minutes before slicing and serving.
