Instructions

  • Remove the trout from the water and pat dry with paper towels.
  • Combine the kosher salt, brown sugar, and black peppercorns in a small bowl.
  • Make sure to coat both sides of the trout with the mixture.
  • Allow the trout to come to room temperature for 30 minutes.
  • Preheat your smoker to 225°F according to the manufacturer's instructions.
  • Drain the wood chips and scatter them over the coals or in the smoker box.
  • Smoke the trout for 2-3 hours, or until the internal temperature reaches 145°F, on the smoker rack.
  • Take the trout out of the smoker and set it aside for 10 minutes before serving.
