Smoked Pig Roast Recipe

- To make the rub, combine the kosher salt, brown sugar, paprika, garlic powder, onion powder, chili powder, and cumin.
- Rinse the pig thoroughly and pat dry.
- Apply the rub to the entire pig, inside and out, making sure to get into all of the crevices.
- Allow the pig to sit for at least 2 hours, or overnight in the fridge.
- Fill your smoker with wood chips and heat it to 225-250°F.
- Place the pig in the smoker for 12-14 hours, or until the internal temperature reaches 190-200°F.
- Keep the temperature stable by adding wood chips as needed.
- Remove the pig from the smoker and let it rest for at least 30 minutes before carving and serving.
